The Shiitake (Lentinula edodes) is an edible mushroom native to East Asia, which is cultivated and consumed in many Asian countries. It is a feature of many Asian cuisines. It is also considered a medicinal mushroom in some forms of traditional medicine.
Log-growing shiitake is a traditional method of shiitake production, mimicking its natural growth in the decayed logs littering forest floors.
Following nine months stored in a moisture-monitored and temperature-controlled polyhouse, the log is then shocked into "flowering" its shiitake treasure by being dipped in cold water, the mushrooms bursting from the by-now decayed log over a period of six weeks.
They are picked by hand from the logs and sold for use.
