You’ll find this garlicky sausage in the northeastern region of Thailand. “Sai krok” means “sausage” in Thai, so this is literally the sausage that hails from Isaan. Isaan food is known to be quite spicy. It is usually eat with your hands along with fresh vegetables. Inside sai krok isaan, there is a lot of garlic and savory spices. You can grill these sausage links over charcoal. I feel obligated to warn you about the garlic breath that this sausage leaves behind. That’s why it’s usually eaten with fresh cabbage leaves, raw chilies and ginger to help freshen your mouth afterward. 1. Add one pound (1/2 Kg) of ground pork to the contents of this pouch. 2. Attach the enclosed casing to a funnel (funnel not included). 3. Fill Casing with pork sausage and seasoning mixed. 4. Divide each casing into 5 equal portions about 1 to 1.5 inches in size. If there are any air pockets, puncture it with a toothpick or pin. 5.Leave at room temperature for an hour. 6. Grill on low heat until cooked through.
